Tomato, Peach & Basil Salad
Ingredients
2 ripe peaches, sliced into wedges
2 large ripe tomatoes (or a handful of mixed tomatoes), sliced into wedges or chunks
125g fresh mozzarella or burrata (optional for creaminess)
A small handful of fresh basil leaves
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar (or balsamic glaze for sweetness)
Sea salt & freshly cracked black pepper, to taste
Optional: a sprinkle of toasted pine nuts or pumpkin seeds for crunch
Method
Arrange the peach and tomato slices on a serving plate.
Tear the mozzarella or burrata over the top, if using.
Scatter the fresh basil leaves.
Drizzle with olive oil and balsamic.
Season generously with sea salt and black pepper.
(Optional) Finish with toasted pine nuts or pumpkin seeds for a nutty crunch.
